Description
Small, live and totally fresh langoustine range between 20 and 30 pieces per kg. The number of langoustine you receive may differ slightly depending on the size and weight of the individual langoustine in your package. Please note that the meat in the claws of the langoustine may not have much yield.
Langoustine are cooked, in a large pan of boiling, very salted water. Before placing the prawns into the boiling water, you would be advised to be able to handle live langoustines carefully.
Small langoustine do not take long to cook; simply bring a pan of salted water to the boil, place the langoustine in the pot and bring back to the boil. Your langoustine will now be ready to eat. Langoustine can be stored for maybe 1 to 2 days in a refrigerator after they have been cooked. We would advised that you cook your langoustines as soon as you receive them, or alternatively, put them in the freezer for around 20 minutes to calm them before you put them into the boiling water. The effect of this is to calm them down and make it easier to handle.
