In one kg of live, fresh, medium langoustine, you could receive between 15 and 20 beautifully fresh, lively pieces of shellfish. The number of langoustine you receive does depends on the size and weight of the individual langoustine that are packed in your box, which means that the number of pieces you receive may differ slightly, but you will still receive weight you have ordered. Please note that the meat in the claws may not have much yield.
Medium langoustine should be ideally cooked as soon as they arrive, or alternatively, put them in a freezer for around 20 minutes before cooking. The effect of this will be to calm them before cooking. Simply cook the langoustines by placing them into a large pan of boiling, salted water, bring the water back to the boil for 1-2 minutes and the langoustine will be ready to eat. Before putting the langoustine into the boiling water, you would be advised to be able to handle live langoustine carefully. Medium langoustine can be stored for about 1-2 days in a refrigerator after cooking.
