Handling Live Langoustine

Your langoustine will arrive in a ‘live’ state so it is important how you handle them to avoid getting nipped by the claws. The best way is to hold the back of the shell firmly with your finger and thumb and point it’s head away from you. Be careful not to squeeze the shell too hard to ensure you do not damage the meat inside.
